Miso-Glazed Chicken & Broccoli

A quick pan dish of seared chicken thigh cubes finished in a sweet-salty miso glaze. Built for the batch-cook flow — the glaze goes on at the end, so it doesn't scorch, and it keeps the chicken moist through freezing and reheating.

Ingredients

Chicken

  • ¾ lb boneless skinless chicken thighs, cubed
  • Salt
  • 1 tbsp neutral oil

Miso sauce (makes enough for the batch)

  • 2 tbsp miso paste (white or yellow)
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1–2 tbsp water, to thin
  • 1 tsp chili garlic, optional (heat)
  • Squeeze of lemon or splash of rice vinegar, optional (brightness)

To serve

  • Roasted broccoli
  • Rice
  • Sesame seeds or sliced scallion, optional

Method

  1. Make the sauce. Whisk the miso, honey, and soy sauce with 1–2 tbsp water until smooth and pourable — it should coat a spoon, not clump. Stir in chili garlic if using.
  2. Sear the chicken. Pat the cubes very dry and salt them. Heat the oil in a hot pan and sear the cubes in a single layer — don't crowd, or they steam. Brown ~5–7 min until just cooked through.
  3. Glaze. Lower the heat to medium. Pour in the sauce and toss for the last 1–2 min, until it thickens and coats the cubes. Watch it — miso's sugars scorch fast over high heat.
  4. Finish. Off the heat, add the optional lemon/vinegar. Serve over rice with roasted broccoli; scatter sesame or scallion if you have it.

Notes

  • Why glaze at the end: miso is high in sugar and protein — added early it burns and turns bitter. It's a finish, not a marinade.
  • Batch & freeze: the glaze doubles as insurance — the sauce keeps the cubes moist through the freeze/reheat cycle, so this one holds up better than the dry-rubbed dishes.
  • No mirin needed: honey + a splash of vinegar stands in for the usual mirin's sweet-tang.
